Walk into almost any modern supermarket and you will probably see plenty of vegetables: tomatoes, onions, carrots, lettuce, broccoli, peppers and potatoes.
So how can the world’s vegetables be disappearing?
The answer is vegetable biodiversity.
Scientists are warning that the world is losing many vegetable species, varieties and wild relatives that have traditionally provided farmers and communities with a broad range of foods. At the same time, people around the world are eating fewer vegetables than recommended.
A new study published in the Proceedings of the National Academy of Sciences argues that reversing the decline in vegetable biodiversity could become an important part of improving global diets, nutrition and agricultural resilience.
This doesn’t mean your local supermarket is about to run out of carrots or tomatoes. Instead, it means the genetic and biological diversity behind the vegetables we eat is becoming narrower.
And that could become a serious problem.
What Is Vegetable Biodiversity?
Vegetable biodiversity refers to the enormous range of vegetable species, varieties and related wild plants that can be used for food, agriculture and crop breeding.
Researchers identified 1,482 vegetable species across multiple sources, while noting that the true number is likely higher because many locally consumed plants aren’t included in standard databases.
That diversity includes familiar vegetables as well as crops that many people have never encountered.
Some vegetables are adapted to extreme heat. Others can survive drought, poor soils or particular pests and diseases. Some contain high concentrations of important micronutrients.

Ironically, agricultural biodiversity may be one of the tools needed to deal with these challenges.
Different varieties can possess different characteristics. One might tolerate drought better, while another could perform better in high temperatures or resist a particular disease.
Losing those traits means losing potential tools for future crop breeding.
3. Changing Diets
There is another problem: people are eating a narrower range of vegetables.
The PNAS researchers estimate that, on average across countries, people consume nearly 40% fewer vegetables than recommended. Low vegetable consumption is also identified as one of the major dietary risk factors contributing to the global burden of disease.
When consumers stop eating particular vegetables, farmers have less incentive to grow them.
That creates a feedback loop:
Fewer varieties grown → fewer varieties available → fewer varieties eaten → less demand for diverse crops → even fewer varieties grown.
Over time, an enormous amount of agricultural and culinary diversity can disappear from everyday life.
Why Does Vegetable Diversity Matter for Your Health?
Vegetables provide vitamins, minerals, fiber and other compounds important for a healthy diet.
But different vegetables provide different combinations of nutrients.
Dark green leafy vegetables, for example, can be important sources of micronutrients, while orange-colored vegetables can provide significant amounts of vitamin A precursors.
The researchers argue that a greater diversity of vegetables could provide additional opportunities to improve dietary quality, particularly in regions where nutritional deficiencies remain widespread.
However, there is an important distinction.
Losing a vegetable variety does not automatically mean people become nutrient deficient.
The bigger concern is that a shrinking pool of crops reduces the number of nutritional, agricultural and cultural options available to us.
In other words, biodiversity gives humanity more choices.
The Potato Shows How Much Diversity Can Be Lost
Potatoes provide a striking example of agricultural diversity.
Thousands of potato varieties exist around the world, but consumers in many countries regularly encounter only a small selection.
That matters because different varieties can have different characteristics, including flavor, texture, growing requirements and resistance to environmental stresses.
The same basic principle applies to tomatoes, peppers, beans, leafy greens, squash and countless other crops.
A vegetable doesn’t have to disappear completely for biodiversity to decline.
Losing 90% of the varieties of a crop can be just as significant from a genetic-diversity perspective as losing a species from the supermarket shelf.
Biodiversity Could Help Agriculture Adapt to Climate Change
One of the most important reasons to preserve vegetable diversity has little to do with what is on today’s dinner plate.
It has to do with tomorrow’s farms.
Scientists and plant breeders need genetic diversity to develop crops that can survive changing environmental conditions.
A variety that seems unimportant today could contain genes that help a future crop withstand drought, heat, disease or other stresses.
The FAO describes plant genetic resources as important for food security, nutrition and adaptation to climate change.
Recent research also suggests that climate change could reduce potential food-crop diversity across large areas of global cropland, particularly at lower latitudes.
That makes preserving genetic diversity a form of agricultural insurance.
The Hidden Importance of Wild Vegetable Relatives
The problem extends beyond cultivated vegetables.
Wild relatives of crops can contain valuable genetic characteristics that have been lost from domesticated varieties.
Researchers are particularly concerned because vegetable biodiversity conservation has historically received less attention than some major staple crops.
The PNAS study argues that conservation efforts should include local varieties and wild relatives in areas where biodiversity and malnutrition overlap.
Preserving these plants could give future generations more options for developing nutritious and climate-resilient foods.
What Can Be Done?
The researchers propose several strategies for reversing vegetable biodiversity loss.
Preserve More Vegetable Varieties
Local varieties and wild relatives need to be collected, regenerated and stored in seed banks and other conservation systems.
The goal isn’t simply to preserve plants as historical curiosities.
Their genetic material could become valuable for future agricultural research.
Develop New Varieties
Scientists can use existing biodiversity to breed vegetables that are more nutritious, climate-resilient, disease-resistant or suited to local growing conditions.
This could help expand vegetable production without relying on the same limited selection of crops.
Put More Diverse Vegetables on the Table
Preserving biodiversity isn’t enough if those vegetables remain unused.
Researchers argue for incorporating nutrient-rich and climate-resilient vegetables into farming systems, markets, schools and household meals.
That could create demand for crops that are currently overlooked.
Support Farmers Growing Diverse Crops
Farmers ultimately need economic reasons to grow less-common vegetables.
Better markets, improved seeds, consumer education and agricultural policies could make diversified production more practical.
What Consumers Can Do
Consumers don’t need to become agricultural experts to help.
A few simple changes can increase the diversity of vegetables in your diet:
- Try a different variety of a familiar vegetable.
- Buy locally grown produce when available.
- Visit farmers markets and ask about heirloom varieties.
- Grow different vegetable varieties in a home garden.
- Try vegetables you’ve never eaten before.
- Support restaurants and stores that offer locally grown or unusual produce.
- Save and exchange seeds where appropriate and legal.
Even something as simple as replacing the same three vegetables every week with several different options can increase dietary variety.
This Isn’t Just About Vegetables
The larger issue is resilience.
Modern agriculture has become extraordinarily productive, but efficiency can sometimes come with a cost: fewer varieties, fewer suppliers and less genetic diversity.
The Food and Agriculture Organization describes biodiversity as a foundation of food and agriculture because genetic diversity, species diversity and ecosystem diversity all contribute to sustainable food production and nutrition.
A more diverse agricultural system gives farmers more options when conditions change.
And conditions are changing.
Climate change, water shortages, emerging diseases, soil degradation and shifting consumer demands will all challenge agriculture in the coming decades.
The crops that help solve those problems may already exist.
We just need to keep them from disappearing.
The Bottom Line
The world’s vegetables aren’t literally disappearing from supermarket shelves overnight.
The more subtle problem is that the diversity behind our food is shrinking.
Thousands of vegetable species and varieties represent an enormous genetic resource. Losing them could mean losing potential sources of nutrition, climate resilience, disease resistance and agricultural innovation.
At the same time, billions of people aren’t eating enough vegetables.
That creates a strange contradiction: the world needs more diverse, nutritious vegetable choices at precisely the time agricultural systems are becoming less diverse.
Reversing vegetable biodiversity loss won’t solve every problem with the global food system. Price, availability, culture and consumer preferences all play major roles in what people eat.
But preserving vegetable diversity could give farmers, scientists and consumers something extremely valuable:
